Salmorejo is the most famous dish of Cordoban cuisine, a cold tomato cream made with tomatoes, of course, but also breadcrumbs, olive oil, garlic, and salt. Similar to gazpacho, another Andalusian classic, its key difference is the thicker consistency. Be aware: it’s often served with ham slivers, added as a sort of topping. You can simply ask for it to be served without ham.
